Chef Xavier and His Passion Xavier has a special connection with the Gers region that has profoundly influenced his cuisine.
Born and raised in Auch, he trained at some of the best restaurants in the area, perfecting the mastery of local gastronomy to create authentic and memorable culinary experiences.
After nearly 20 years in Canada, showcasing his skills in local restaurants and a fun appearance on Top Chef Canada, Xavier now hopes to share his passion for cooking in France by inviting clients for a full week to discover where it all began for him.
He will take you on a tour to experience the region, from its history to its local traditions, taste all the regional flavors, unique wines, and showcase their quality with hands-on cooking classes to learn traditional French recipes and pairings.

Xavier is just incredible! We had him in for a private event and the seafood tower was to die for, and priced exceptionally. I am celiac and he was so aware of allergens, I highly recommend for anyone with diet restrictions. Thank you Xavier for a wonderful and delicious evening!
